BOMBAY ORIGINAL DRY GIN

Bombay uses the original eight components documented in a 1761. These botanicals are vapor-infused with the base spirit before being bottled. Bombay instead places their botanicals in a large metal basket that is suspended in the neck of the still.

Bombay Bramble is Bombay Sapphire’s first new expression. It’s also the most unorthodox gin to come out of Bombay, a red-hued spirit flavored with “the essence of fresh blackberries and raspberries harvested at their ripest moment.”
Bombay Bramble isn’t a sloe gin, but I’ve been using as an approximation of one. It’s clearly meant exclusively for mixing, where it works quite well. 37,5% ABV.

Gin de Mahón is a style of gin limited to the Spanish island of Menorca. Production of the gin includes a direct-fire copper pot still and juniper which "age" for 2 years near the harbour. The base of the gin is made from wine using parellada and xarel-lo grapes from the Penedès region known for its cava. Xoriguer Gin de Mahón matures in American oak barrels before bottling. 38% ABV.

Macaronesia is the name of the collection of islands in the North Atlantic, these include the Canary Islands, and stems from the Greek words for “islands of the fortunate”.
Crafted in Santa Cruz, Tenerife with local botanicals, this gin is also made with volcanic filtered water, which helps give this gin its refreshing taste.

This contemporary gin is the result of a blend of two separate spirits each distilled using a different technique, one spirit is created in a pot still with botanicals steeped in the base spirit overnight before distillation, and the other spirit is produced in a Carter-Head still which steams the more delicate botanicals in a basket in the neck of the still. Blend of Nicaraguan molasses' rums aged up in ex bourbon white oak barrels to or for a full 4 years and then filtered.- 40% ABV

FLOR DE CAÑA 5 AÑEJO CLÁSICO

Produced from molasses which is made from sugar cane harvested in fields adjacent to the distillery in Chichigalpa. This molasses is fermented and then distilled five times in a continuous column still. The resulting distillate is laid down to age in small American white oak barrels in traditional aging warehouses built without air conditioning in an undisturbed environment.

PLANTATION 3 STARS

The first-ever white rum from Plantation is named for three rum-producing “stars” of the Caribbean: Barbados, Jamaica and Trinidad. The blend features unaged rums from Barbados and Jamaica, a 3-year-old rum from Trinidad and a 12-year Jamaican rum.
Any color from the aging process has been removed via carbon filtration before bottling.

It is raised to a final level of purification using a quadruple charcoal filtering process, and then it is finished in steel ‘resting’ tanks before bottling. 40% ABV

This Polish Vodka comes from the Białowieża Forest, one of the wildest corners of Europe. The water it forms from is drawn from the cleanest springs located there. The wheat used in the production of the spirit comes exclusively from Polish fields, and its grains are carefully selected. It is also subjected to a unique charcoal filtration process into which Białowieża oaks have turned. 40% ABV

Chambord is a black raspberry liqueur. It is made from an infusion of raspberries and blackberries. Other ingredients include Madagascar vanilla, Moroccan citrus peel, honey, and XO cognac which the master blender balances all together to create a concentrate. 16,5% ABV

The world-famous herbal liqueur, whose green colour comes entirely from the 130 herbs used to make it. This spicy, herbal and sweet liqueur, which has a distinctive flavour, is made by Carthusian Monks to a recipe they were given in 1605. 55% ABV

This liqueur is made from 130 herbs, plants and flowers which were crushed, macerated, and distilled in a manner which is known its entirety by two monks today. Its color is derived exclusively from maceration. 40% ABV.

HUMO chipotle pepper liqueur

This liqueur is made with jalapeño pepper grown in an organic garden in Segovia, Spain for 8 months and then smoked, dried and cured for 6 months to turn the Jalapeño pepper into Chipotle. The Chipotle chili is macerated in alcohol with 5 botanicals: Citrus peel, cinnamon, cocoa, allspice, thyme and is finished by maturing in oak barrels that previously held Pedro Ximénez.
